Automatic measuring system of lactic

acid bacteria forming activity

The Cinac system, developed by the INRA (LGMPA, lab. G. CORRIEU) as requested by the major French dairy groups, allows continuous monitoring of lactic acid ferment forming activity, through the simultaneous observation of the evolution of the pH and temperature of one or several samples in order to :

·         determine the acid forming characteristics specific to the strain studied.

·         evaluate and anticipate its impact on process development.

·         examine the influence of various parameters on its acid forming capacity (different media, temperature…).

·         define adequate inocula (mixing of lactic starters, complementary characteristics…).

 

A modular analysis system

The Cinac system controls a large number of real time pH and temperature measurements, in a variable and multiple channel configuration : 16 to 32 measurement channels and up to 16 regulation channels.

Each channel may be controlled independently, thus allowing multiple processing, whatever the number of chanels used and whatever the time of the day. The apparatus thus performs several tasks according to the desired configuration, at the user defined acquisition frequency, ensuring calibration validity.

Simulating your process

By programming a thermal cycle, the operator will be able to reproduce or simulate the modifications of his process conditions (temperature variations), and to compare, using a graph and / or the descriptors, the potential effects on the bacteria strain studied.

A total description of the strain studied

In addition to the 3 available curves (evolution, speed and acceleration of the pH and temperature), the Cinac software stores in real time plenty of descriptors of the strain studied, such as : pH at 4H, pH at 6H, time required to obtain ph 5, maximum speed, time span during which the speed exceeded 50% of the maximum speed  ; these descriptors can be user-defined.

All the Cinac equipment installed are standardized, so as tu ensure a perfect repeatability of the measurements and an optimum comparison from one Cinac to another. Consequently, Cinac users speak the same language and even consider come descriptors as reference values.

A specific Windows based software

Data processing is quite simple thanks to the Windows environment (3.1, 95, 98 or NT) and to the various utilities, with many advanced functions :

  • communication with the measurement interface and managament of this interface.

  • automatic correction of the temperature variations on the pH.

  • reference library.

  • two-point calibration of the pH probes with validity tests.

  • data checking.

  • real time calculation of the acid forming speed and kinetics descriptors.

  • storage of processed data.

  • graphical representation of data.

  • exportation to database or conversion to other softwares.

This software also makes it possible to create and manage libraries. These libraries then allow you to compare an unknown sample to a library of known strain.

An upgradable system

Sensors other than pH and temperature (redox…) may be coupled to the Cinac system for additional measurements. The system's great modularity also allows post-purchase evolution, i.e. through the addition of further acquisition and / or regulation modules.

The operator may program a thermal cycle then ask for the calculation of specific descriptors. This great software flexibility will benefit from the latest evolutions through proposed upgrades.
